Poached Mackerel

Ingredients:
2 mackerel cleaned
cornflour
fresh parsley
butter

Cooking Instructions:
poach in simmering water until soft
boil some potatoes . when the potatoes are cooked take out and use the water to make the parsley sauce.
Mix up about 3 tablespoons of cornflour with a little water to make a paste, add a little at a time until its the thickness required, then add a tablespoon of butter and the fresh parsley, once cooked the mackerel will be easy to take the bones out...

Put mackerel and potatoes on the plate and add the parsley butter. Aabsoulutely beautiful.
